White pudding has a rich, savoury flavour, thanks to the combination of pork fat, meat, and oats. The seasoning, particularly the onions, adds a slight sweetness and depth, while the oats provide a gentle graininess that contrasts with the smoothness of the fat. Unlike black pudding, it’s milder and less earthy, with a subtle yet satisfying pork flavour.
